Preserve It . . . Canning Corner - Strawberry Freezer Jam!

Strawberries are available at Day Farms for

2 weeks in June and 2 weeks in August,

so I thought I would go with an old favorite this week:

Strawberry Freezer Jam!

Here's the Recipe:

3 1/4 cups Crushed Berries

1/4 cup Fresh Lemon Juice

4 1/2 cups Sugar

1 cup Light Corn Syrup

Instructions:

Remove stems from strawberries.

Crush berries using a potato masher.

or

Lightly chop/pulse in food processor (leave chunks).

Do Not Puree'

Measure exact amount of prepared fruit along with lemon juice

into a large bowl.

Measure exact amount of sugar into seperate bowl.

(Reducing sugar or using substitute will result in set failures.)

Gradually stir 1 box pectin into fruit.

Mix thoroughly.

Set aside 30 minutes, stirring every 5 minutes to dissolved

pectin thoroughly.

Pour 1 cup light corn syrup into fruit mixture.  Mix well.

This prevents sugar crystalization during freezer storage.

Stir in sugar gradually.  Stir constantly until sugar is completely

dissolved and no longer grainy.

Pour into prepared containers, leaving 1/2-inch headspace.

Let stand at room temperature 24 hours until set.

Refrigerate up to 3 weeks.

Otherwise, store in your freezer for up to 1 year.

Thaw in the refrigerator before serving.

Yields 7 cups.

Preparedness Project - Emergency Car Kit!

I know it's Friday . . . but this was supposed

to automatically post Wednesday, and it didn't!
(I just noticed that it didn't last night, sorry about that.)

Oh Well . . . Friday Works Too!

I don't know about you, but I have my

"Perfect Emergency"

all planned out!

My entire family will be at home,  dinner will be ready,

and the meal will be something easy to take with us,

my emergency items will be placed neatly by the door,

the clothes in my 72 hour kits will fit everyone

perfectly and be in season, the cars will all be full of gas

with a great movie ready to go in the DVD player,

and our 72 hour kit food will be AMAZING!

Yep, that's my Perfect Emergency!

Sad as it is . . . I'm pretty sure the chances of that happening

are SLIM TO NONE!

So, here's an option that gives me a little more

peace no matter where my family happens to be

in an emergency . . .

An Emergency Car Kit
This is what mine looks like:

It's a cooler on wheels!

I got mine from Walmart.

There is a seperate cooler in the top.

I keep my emergency food here.  We rotate this often!

(My kids always seem to need an "Emergency" snack.)

I use the next section, or second cooler to hold:

Gloves, Hats, an Extra Scraper, Fire Extinguisher, Fix a Flat,

Toilet Paper, Wet Wipes, Hand Sanitizer, Ziploc Bags, Duct Tape,

Electrical Tape, Waterproof Matches, Fire Starters, Lighter,

Rubber Gloves, N95 Masks, Road Flares, Tie Backs, Rope,

Fleece Blanket, Rain Ponchos, Flashlight with Batteries,

Handcrank Radio, and Cell Phone Charger.

I used the side pocket to hold:

Jumper Cabels and a Small Folding Shovel

I used the front pocket to hold:
Hygiene Kits, Toothbrushes and Toothpaste, Female Hygiene
Supplies, Sewing Kit, Fingernail Clippers, First Aid Kit, Asthma,
Alergy or other Prescription Medication (including Asprin),
Hard Candy, Compass, Whistle, and some Garbage Bags.
If you have a baby . . . add an Extra Binkie, Bottle, and
a few Diapers.

I used the hidden pockets to hold:

Emergency Quick Cash, Emergency Information Kit,

An Extra Credit/Debit Card, and Extra Keys to Home and Cars.

Emergency Car Kits Should Include

Everything you might need if your car breaks down on a lonely

road, if you are stranded in your car during a sudden

weather emergency,

Or if you have to evacuate in a disaster type situation.

Car kits are the ideal safety tool for your travels

All Year Round!

Severe conditions or disaster emergencies

can happen anywhere, in any season!

Make sure you are prepared with car tools and items

that can keep you warm, provide light, keep you hydrated,

and can signal for help.

Here's a list of the items you should have in your

I noticed that this car kit has

NO FOOD included!

I would add some for sure . . . I don't want to be sucking

on hidden rotten ketchup packets if there's an emergency and I'm

in my car!  I also added some cash and some emergency instructions.

Otherwise, either one of the car kits are great choices,

the most important thing is to just . . . GET THEM DONE!

Family Activity - Let's Go Fishing . . . Toe Fishing!

When was the last time you went

FISHING?

Good Times . . . HUH!

Never been fishing?!?

Don't Worry . . . It's a great adventure!

The first time we took our boys fishing,
WE DIDN'T CATCH A THING!
(We were Rookies after all!)

My son, Corey was a little sad about going home empty-handed,

so we decided to stop at the store and buy a whole fish

with eyeballs and everything!

Our plan was to take it home and cook it up so that all the boys

could have a taste . . . or at least that WAS the plan.

Once Corey saw the fish, he immediately started to cry and

decided we should just bury it in the yard so that it could be

ressurected!
(Did I mention the fishes name was BARRY!)
(Hee Hee . . . so stinkin' cute!)

It has become one of our FAVORITE MEMORIES,

and the tree we planted the fish by . . . grew like no other!

If the thought of fishing gives you a serious case of the

SHIVIES . . . Here's another option!

You won't need a fishing license for this Family Activity

and you won't be stinky by the end!
It's called "Toe Fishing"
and you can do it in your own backyard!

You Will Need:
Plastic Fish or Sea Creatures
(I found mine at the Dollar Store.)
A Plastic Pool,
Some Water,
and
YOUR TOES!
The Object of the Game:
Is to catch as many fish as you can
using only your toes . . . in 1 minute.
(Just a little bit of cheating going on in the picture above.)
The fish have to be thrown from the wading pool
with your feet.
Each fish found on the ground
after the minute is worth a point.
The WINNER
gets a bag of Swedish Fish as their Prize!
NOTE:
It's nice to have a buddy to hold on to when you're fishing
just for balance . . . We're not as coordinated as we were
in our younger years and without a buddy to hold on to,
Mom's most likely goin' down!!!
Yep, I know this one from PERSONAL EXPERIENCE!
(Another great family memory!)

Mix Recipe #2: Best Ever Butterscotch Oatmeal Cookie!

Mix Recipe #2:

Best Ever

Butterscotch Oatmeal Cookie Mix!

Here's the Recipe:

1/2 cup Butterscotch Chips

1/2 cup Dark Brown Sugar

1 cup Old-Fashioned Oats

1 cup Biscuit and Baking Mix (Bisquick)

1/2 cup Light Brown Sugar

1 cup Biscuit and Baking Mix (Bisquick)

Layer the ingredients in the order given into a wide-mouth

1-quart canning jar.

Pack each layer into place before adding the next ingredient.

To Make the Cookies Add:

1 Jar Best Ever Butterscotch Cookie Mix

1/2 cup Butter or Margarine, Melted

1 Egg

1 tsp. Vanilla

Baking Instructions:

Preheat the oven to 375 degrees.  In a medium bowl, cream

the butter, egg and vanilla.

Add the Best Ever Butterscotch Cookie Mix and stir

until well blended.

Shape into 1-inch balls.

Place on a greased baking sheet.

Bake for 10-12 minutes or until cookies are a light golden brown.

Cool on wire racks and . . .

ENJOY!

I had to do a little Princess Research on this one.

I wasn't exactly sure what to do for a Princess Job Chart,

since I don't have any girls . . . but I think this will work.

It's put together the same as the

"Hop To It" Frogs, but instead of Frogs,

you get PRINCESSES!

Double Sided Tape

Cut out the Princesses

(I leave a little bit of white around the whole princess . . . just for sanity reasons.)

Laminate

Use Double Sided Tape to attach the Princess and Job assignments

to the Tongue Depressors.

Cut out the Castle Picture

Laminate Castle Picture and Attach it to the Can.

That's All There Is To It!

Weekly Chore Card

Each day ALL of the chores are complete,

Your Little Princess will get a Star!

Cut, Laminate, and add Velcro to the back of the stars

and to the Weekly Chore Card daily squares below.

Decide at the beginning of the week what Privileges she will earn

with a completed card.

A completed card can be good for:

A Play Date with a Friend

T.V. Time

A New Book

or

Time with Mom and Dad.

Let your Little Princess help you decide!

Mix Recipe #1!

Today is the first day of our

Month of Mixes!

Each day you will get a new Mix Recipe,

along with the Jar Label and Instruction Tag.

Mix Recipe #1:

Crunchy Toffee Cookie Mix

Here's the Recipe:

Layer the ingredients into the jar in the order given.

Use a wide-mouth 1-quart canning jar.

Pack each layer tightly before adding the next ingredient.

2/3 cup Toffee Chips

1/2 cup Chopped Pecans, Toasted and Cooled Completely

1/2 cup Dark Brown Sugar

1 cup Buscuit and Baking Mix

1/2 cup Light Brown Sugar

1 cup Biscuit and Baking Mix

To Toast Pecans:

Place nuts in a single layer on a baking sheet.

Bake pecans at 350 degrees for about 10 minutes

or until the nuts are golden brown.

Instructions:

Ark Prep 101 - Emergency Door Alerts!

Emergency Door Alerts

are a great way to quickly check on the people in your

neighborhood after an emergency situation.

You will need 4 sheets of colored paper.

Each color has a specific meaning:

Green

Yellow

Red

Black

White

In the Event of an Emergency,

you will need to tape the colored piece of paper that

applies to your situation to your front door so that

it can be easily spotted from the road by

Emergency Personnel.

(They encourage using this specific system!)

Pages can be kept with your Vital Records Binder

or in an Entryway Closet.
