Food Storage Meals & Menu Planning - Dessert: Lemon Squares!

Today's Dessert Menu Item Is:
Lemon Squares!
Here's the Recipe:
Lemon Squares Recipe
Crust:
1 1/2 cups Flour
3/4 cup Powdered Sugar
3/4 cup Butter
Lemon Filling:
6 Large Eggs
3 cups Sugar
1 1/3 cup Lemon Juice
Grated Zest of 1 Lemon
1/2 cup Flour
Preheat oven to 325 degrees.
Sift the flour and powdered sugar for the crust
and then Add the butter.
Mix it by hand - it should be a crumbly texture.
Press it into the bottom of a 13x9-inch pan.
Bake the crust for about 20-30 minutes.
Filling:
Whisk together eggs and sugar.
Add the zest and lemon juice.
(I also squeezed the lemon into it after I used the zest.)
Sift the flour over the mixture and stir it until it's mixed in.
Pour over the baked crust and put it back into the oven for
another 35 minutes.
Let it cool completely before cutting.
Store squares in the refrigerator.
To make the Recipe EVEN MORE Food Storage Friendly:
Replace the homemade filling with canned lemon pie filling.
You can also dehydrate your own lemon peels to use in place
of fresh lemon zest.
It's very concentrated so you don't have to use very much.
